This week we decided to change topics to keep things interesting on Buckscoop’s Bargain blog. So instead of the usual roundup of Australian freebies on a Friday, instead I’ve went online to seek out some of the top life hacks being used by people around the world.

Weekly Scoop of Top Life Hacks: Save Money & Calories

Todays focus is going to be on how we can create some quick and easy snacks that taste delicious, are super easy to make and help you save money while you save on the calories too. So the next time you feel like pigging-out at a fast food chain or buying a meal out, remember that you can save yourself a few dollars and produce something equally tasty at home.

Oven Fried Chicken that Tastes like Deep Fried Chicken without the Calories

If you are a fan of KFC (openly or not) then this meal will surely get your taste buds tingling because we’re not just talking about oven cooked chicken, as this dish also includes crispy, spicy skin and all the flavours without the preservatives of a KFC meal.

To get started, the ingredients that you will need are as follows:

  • 1.5kg of chicken drumsticks
  • 2 TBSP salted Cajun seasoning
  • Liquid smoke
  • 1 cup flour
  • 1 TBSP corn-starch
  • 2 eggs
  • Two 5-ounce bags seasoned croutons, crushed
  • 3 TBSP melted butter

Zesty Mexican Rice Skillet

This dish is an instant mid-week dinner winner and it ticks all the right boxes too. It’s easy to prepare, quick to throw together and it can be scaled up to feed small or large families. This simple yet zesty Mexican rice skillet dinner includes all the best parts of a delicious Mexican meal and only takes 25-30 minutes.

The ingredients you need to bring this meal to life are:

  • 500g ground beef
  • 1 large onion
  • Taco seasoning
  • 2 cups chicken broth
  • 1 tin of corn
  • 1 tin tomatoes
  • 1 tin black beans
  • 1 cup rice
  • Diced jalapeno
  • 2 cups grated cheddar cheese

Veggie Side Dish

Meat might be enough for some people, however others might feel the need for some vegetables on the side. Well this dish is one of the best recipes I have found online for making the average cabbage exciting. Cabbage in all stretches of the imagination is quite boring so when I found this method of turning it into a tantalising meal it had to feature here. This dish is so simple it barely qualifies as a recipe, but its super healthy and can look really decorative too.

The ingredients you will need are as follows:

  • 3 TBSP extra virgin oil
  • 1 medium head of green cabbage cut into 2cm thick rounds
  • Pinch of course salt and pepper
  • 1 TSP caraway or fennel seeds

Caprese-Stuffed Portobellos

This is another absolutely delicious side dish that can be eaten as a healthy snack by itself or added to accompany a main. The recipe is simple and easy to follow and the infusion of mozzarella, tomato and balsamic vinegar are enough to make the mouth water at the thought of it. There is little prep time associated with this dish and the oven does all the hard work so you can get back to what you were doing.

To prepare this meal you will need the following ingredients:

  • 5 large Portobello mushrooms, cleaned, stem and gills removed
  • 2 TBSP butter
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 5 fresh mozzarella balls, sliced thinly
  • 1 cup grape tomatoes, sliced thinly
  • Fresh basil, sliced for garnish
  • Balsamic reduction*

* Balsamic reduction is derived from simmering balsamic vinegar gently in a saucepan until it thickens and reduces to ¾ of its original volume.
